Conforme o conceito de operações unitárias, estabelecido por volta do ano de 1915, um processo químico poderia ser dividido em uma série de etapas, desde transferência de massa a transporte de sólidos ou líquidos, condições de destilação, filtração, evaporação, secagem, entre outros. Nesse contexto, cada etapa do processo em uma linha de produção é uma operação unitária, operações físicas necessárias de maneira sequencial para a aplicação e viabilização econômicas dentro de um processo químico. Existem três tipos de operações unitárias principais: as transferências mecânicas, de calor e de massa. As operações de transferências de calor realizam trocas térmicas entre fluidos, enquanto as operações de transferências de massa realizam a separação de fluidos miscíveis. Ambas serão detalhadamente discutidas nesta obra, visando a fornecer todo o aporte teórico de que o aluno necessitará no futuro exercício da profissão.
