The vineyards are located around Gibellina, in the Belice valley near Trapani on the western side of Sicily.After the harvest, the grapes are destemmed and pressed. The fermentation takes place with selected yeasts at a temperature that does not exceed 18°C. To preserve the freshness of the aromas, there is no malolactic fermentation.
