The 8pm bottle from the Hinemos brand. A nigori (“cloudy sake”, which means some of the fine particles of yeast and steamed rice remain as sediment) in which the main aroma is that of cooked rice, sake lees and fresh cheese. This sake has a creamy texture and an enveloping flavour of rice-driven sweetness and umami, with a slightly tart aftertaste that cleanses the palate. TYPE:Nigori sake COLOUR: Cloudy off-white OUR TASTING NOTES:On the nose, lychee yoghurt, rice flour, lemongrass. On the palate, lightly alcoholic sake with sweet and juicy acidity, coconut cream, pineapple and passionfruit flavours. Soft and creamy texture. FOOD PAIRING: Mochi ice cream; pear compote; spicy dishes. The brewers recommend trying it with any type of food.
