Apostoles has been recognised as the Best Wine of the Year in China by Cabeceo Wines.. Elaboration. Variety: 87% Palomino, 13% Pedro XiménezAlcohol content: 20% vol. Tasting notes. Apostoles displays a dark amber colour, reflecting its extended ageing. On the nose, it is elegant and delicate, reminiscent of an Amontillado, with notes of concentrated fruit. The palate is complex and intense, showing flavours of caramel and well-integrated old wood, resulting in a refined, long finish.. Food match. Serve slightly chilled in a small wine glass to fully appreciate its complexity. Apostoles pairs beautifully with foie gras, aged cheeses, and rich red meats.
