Cantina di Negrar, founded in 1933, is one of the most respected cooperatives in Valpolicella and the birthplace of Amarone. Bringing together generations of local growers, the winery is renowned for its expertise in the appassimento tradition and its commitment to quality, sustainability and regional authenticity. Their wines reflect both the heritage of the area and the skill of the growers who tend the vines.. Production. Grapes are harvested at peak ripeness and then laid out to dry in well-ventilated fruttaio lofts, where they slowly lose water and develop concentrated flavours. After gentle pressing, fermentation takes place at controlled temperatures to preserve fruit purity while extracting colour and structure. The wine is then aged in oak barrels to integrate its rich fruit, soft tannins and warm spice, resulting in a smooth, harmonious and full-bodied style.. Tasting Notes. Deep ruby in colour, the wine opens with aromas of ripe cherry, plum, dried berries and sweet spice. The palate is plush and rounded, offering generous dark fruit, hints of chocolate and vanilla, and a touch of warming spice from oak ageing.
