Fernando Castilla Antique Pedro Ximenez Sherry 50cl
Fernando de Castilla Antique Pedro Ximénez Sherry is an extraordinarily rich, dark, and decadent fortified wine produced in the historic city of Jerez de la Frontera in Andalusia, Spain. Bodegas Rey Fernando de Castilla is revered worldwide as one of the pre-eminent boutique producers in the Sherry Triangle, renowned for crafting unblemished, exceptional wines with traditional methods. Belonging to the prestigious Antique range, this rare single-varietal Pedro Ximénez is drawn from an ancient solera with an average age exceeding thirty years, representing the absolute pinnacle of sweet sherry winemaking.. Why You'll Love It. This wine stands out for its monumental concentration, viscous mouthfeel, and breathtaking aromatic complexity. Sourced from naturally sun-dried grapes and aged for decades in seasoned oak casks, it offers an unctuous profile that coats the palate in pure velvet. Bottled without chill-filtration or fining to preserve its natural depth and texture, it delivers an intoxicating symphony of dark dried fruits, roasted coffee, and molten chocolate, held in harmonious balance by a firm underlying core of natural acidity.. Vineyard & Production. The Pedro Ximénez grapes are grown on the sun-baked, chalky albariza soils of the region. Following the harvest, the whole bunches are laid out on straw mats in the intense Andalusian sun for several weeks to undergo pasificación, a process of sun-drying that dehydrates the grapes and concentrates their natural sugars and acidity. After gentle pressing and partial fermentation, the wine is fortified and enters the traditional criaderas y solera system, maturing oxidatively for over three decades in old American oak barrels to develop immense richness and structural depth.. Tasting Notes. In the glass, it displays an opaque, dark mahogany-black colour with warm amber rims and slow, viscous legs. The nose is intense, complex, and intoxicating, bursting with aromas of dried figs, Medjool dates, raisins, and prunes, layered with notes of dark molasses, roasted espresso beans, dark chocolate, and a hint of pipe tobacco. On the palate, it is full-bodied, thick, and extraordinarily sweet, delivering a wave of dried fruit compote, treacle, and toasted nut flavours, balanced by a fine vein of acidity that prevents it from feeling cloying on the long, lingering finish.. Perfect Pairings. With its luxurious sweetness and intense dark fruit profile, this old Pedro Ximénez is a magnificent dessert in its own right and an extraordinary partner for rich sweet treats. It pairs extraordinarily well poured directly over high-quality vanilla bean ice cream, as well as alongside dark chocolate tarts, sticky toffee pudding, fruitcake, and blue cheeses such as Cabrales, Roquefort, or Stilton. It is also an exceptional partner for rich liver pâté and foie gras.. Grape Varieties. 100% Pedro Ximénez
