This natural drying process, combined with the region's cool breezes and well-drained soils, produces fruit of exceptional intensity. Cantina di Negrar, founded in 1933, is one of Valpolicella's most respected cooperatives and the birthplace of Amarone. Bringing together generations of local growers, the winery is renowned for its mastery of the appassimento tradition and its commitment to quality, sustainability and regional authenticity. Their wines reflect the heritage of the area and the skill of the growers who tend the vines.. Production. Grapes are harvested at peak ripeness and laid out to dry for several months, allowing water to evaporate and flavours to intensify. After gentle pressing, fermentation proceeds slowly to extract colour, richness and aromatic complexity. The wine is then matured in a combination of large oak casks and smaller barrels, where it develops layers of spice, chocolate, dried fruit and velvety tannins. This patient, traditional approach results in a full-bodied, harmonious and age-worthy Amarone.. Tasting Notes. Deep garnet in colour, the wine opens with aromas of dried cherry, plum, fig, sweet spice, cocoa and hints of tobacco. The palate is opulent and full-bodied, offering rich dark fruit, notes of raisin and chocolate, and warm, enveloping spice.
