Why You'll Love It. This wine stands out for its plush mouthfeel, structural finesse, and captivating dark berry profile. Grown under Mollydooker's proprietary Marquis Vineyard Watering Programme, the grapes achieve optimum phenolic ripeness and sugar concentration while retaining brilliant varietal acidity. Matured in the finest American oak barrels, it delivers an irresistible, multi-layered bouquet of cassis, black cherries, sweet tobacco, and toasted cocoa, supported by ultra-fine, velvety tannins that provide immediate indulgence and impressive cellaring strength.. Vineyard & Production. The grapes are hand-harvested from select old-vine Cabernet Sauvignon parcels situated in McLaren Vale, where ancient soils and Mediterranean maritime breezes create ideal growing conditions. Upon arrival at the winery, the fruit is destemmed and gently crushed into open-top fermenters. Fermentation takes place with regular cap management to extract deep ruby colour and supple, structural tannins. Following pressing, the wine undergoes malolactic fermentation and is aged for up to twelve months in American oak barriques (predominantly new and second-fill) before final barrel selection and bottling.. Tasting Notes. In the glass, it presents a deep, opaque purple-black colour with a radiant violet rim. The nose is expansive, complex, and inviting, opening with generous aromas of cassis, ripe black cherries, and dark plums, seamlessly layered with notes of dark chocolate, sweet vanilla bean, pencil shavings, and subtle eucalyptus. On the palate, it is full-bodied, rich, and beautifully balanced, delivering concentrated blackcurrant and berry flavours underpinned by a vibrant line of freshness and velvety tannins that carry into a long, savoury, and memorable finish.. With its commanding structure, rich dark fruit core, and sophisticated oak profile, this McLaren Vale Cabernet Sauvignon is a magnificent partner for fine gastronomy and hearty feasts.
