Savage Wines "Salt River" Sauvignon Blanc (Western Cape, South Africa) Producer Salt River Sauvignon Blanc is made by Duncan Savage, one of South Africa's most respected winemakers. After building the reputation of Cape Point Vineyards, he launched Savage Wines as his own project and now focuses on sourcing fruit from outstanding coastal and high-elevation vineyard sites across the Western Cape. His winery is located in the Salt River district of Cape Town, which gives the wine its name. The Wine The wine is typically sourced from mature Sauvignon Blanc vineyards in Stellenbosch and other coastal sites. Fermentation takes place in a mix of stainless steel, concrete eggs, and older oak barrels to add texture and complexity while preserving freshness. Tasting Notes Bright aromas of grapefruit, gooseberry, elderflower, lime zest and white currant. Subtle notes of wet stone, sea spray and fresh herbs. Medium-bodied with impressive texture and purity. Crisp acidity balanced by a saline, mineral character. Long, refreshing finish with citrus peel and coastal freshness.
