Matured through a traditional solera system in seasoned American oak casks, it offers an enticing harmony of green orchard fruit, salty sea spray, and toasted almond nuances, making it a quintessential aperitif.. Vineyard & Production. The Palomino Fino grapes are hand-harvested from high-grade vineyards planted on pristine, chalk-rich albariza soils in the Jerez region. Following gentle pressing and temperature-controlled fermentation, the base wine is fortified to fifteen percent alcohol and enters the criaderas y solera system. It ages biologically beneath a thick layer of living flor yeast, which protects the wine from oxygen while consuming residual sugars and glycerine, imparting its signature pale hue, bone-dry texture, and distinctive autolytic aroma profile.. Tasting Notes. In the glass, it displays a pale lemon-straw colour with bright greenish reflections. The nose is lifted, fresh, and aromatic, opening with scents of green apples, lemon zest, and fresh dough, layered with notes of raw almond, dried chamomile, and subtle saline sea air. On the palate, it is bone-dry, light-bodied, and vibrant, delivering crisp orchard fruit and citrus flavours supported by a fine streak of chalky minerality and a clean, savoury, and appetizing finish..
