Vineyard & Production. The Palomino Fino grapes are grown on pristine white albariza soils, famed for their high chalk content and exceptional water retention during dry Andalusian summers. The base wine initially ages under a protective veil of yeast (flor) as a Fino, gaining saline lift and fine autolytic character. Once the flor naturally depletes, the wine undergoes oxidative maturation in traditional American oak casks through the criaderas y solera system, allowing it to deepen in colour, soften in texture, and acquire rich, nutty oxidative nuances before bottling.. Tasting Notes. In the glass, it displays a bright amber colour with warm golden reflections.
