Cultivated using Mollydooker's proprietary Marquis Vineyard Watering Programme to ensure optimal fruit density and phenolic ripeness, the grapes deliver an immense concentration of natural sugars, flavours, and vibrant acidity. Matured carefully in fine American oak barrels, it delivers an irresistible, multi-layered profile of ripe blackberries, dark chocolate, sweet vanilla, and roasted espresso, supported by soft, mouth-coating tannins.. Vineyard & Production. The grapes are hand-harvested from select old-vine parcels in McLaren Vale, where the Mediterranean microclimate and ancient soils produce grapes with immense depth and complexity. Upon arrival at the winery, the fruit is destemmed and crushed into open fermenters. Fermentation occurs under controlled conditions with regular cap management to extract rich colour and supple tannins. Following pressing, the wine undergoes malolactic fermentation and is aged for up to twelve months in American oak barrels (predominantly new and second-fill) before careful barrel selection and bottling.. Tasting Notes. In the glass, it reveals an opaque, deep purple-black colour with vibrant magenta highlights at the rim. The nose is powerful, expansive, and highly expressive, opening with opulent aromas of blackberry liqueur, dark plum jam, and cassis, seamlessly integrated with notes of dark chocolate, sweet vanilla bean, toasted coconut, and freshly ground coffee. On the palate, it is full-bodied, rich, and mouth-coating, delivering luscious black fruit flavours framed by a vibrant line of acidity and fine, velvety tannins that lead into a long, warming, and luxurious finish..
