Belonging to the prestigious Antique range, this single-varietal Palomino Fino is drawn from casks with an average age exceeding thirty years, showcasing the absolute pinnacle of oxidative maturation.. Why You'll Love It. This wine stands out for its extraordinary aromatic depth, mouth-coating texture, and bone-dry precision. Unlike Finos or Amontillados that experience biological aging under a yeast veil, Oloroso is fortified to a higher strength from the outset, allowing direct, continuous contact with oxygen throughout its lifetime. Bottled without chill-filtration or fining to preserve its natural depth, it delivers a deeply layered profile of roasted nuts, dried fruits, and wood spice underpinned by a firm spine of natural acidity.. Vineyard & Production. The Palomino Fino grapes are hand-harvested from exceptional vineyard parcels cultivated on pure white, chalk-rich albariza soils in the Jerez region. The grapes selected for Oloroso yield a fuller, more structured base wine. After fortification to around seventeen percent alcohol to prevent flor development, the wine enters the traditional criaderas y solera system for pure oxidative aging in old American oak barrels. Over three decades, natural evaporation slowly concentrates the wine, deepening its mahogany hue, building velvety body, and enriching its structural complexity before bottling.. Tasting Notes. In the glass, it displays a dark, glowing mahogany colour with burnished copper highlights. The nose is intense, broad, and deeply aromatic, filled with scents of toasted walnuts, roasted pecans, and dried figs, complemented by complex notes of dark orange marmalade, antique furniture, dark tobacco, and subtle spices. On the palate, it is full-bodied, bone-dry, and expansive, delivering rich, savoury flavours of roasted nuts, dried stone fruits, and wood smoke, held together by a vibrant vein of acidity that flows into an exceptionally long, warming finish.. Perfect Pairings. With its broad, muscular structure, rich savoury character, and bone-dry finish, this old Oloroso is a formidable match for rich, slow-cooked foods and intense flavours. It pairs magnificently with braised ox cheek, roasted game such as venison or grouse, slow-cooked pork belly, and rich beef stews.
