Vineyard & Production. The Palomino Fino grapes are hand-harvested from high-grade vineyards planted on pristine, chalk-rich albariza soils in the Jerez region. The base wine begins its life aging under a delicate veil of yeast (flor), developing crisp, fine characteristics. When the flor layer unexpectedly dissipates, the cellar master identifies the unique potential of the cask and fortifies the wine slightly higher to shift it into full oxidative aging within the traditional criaderas y solera system. Over three decades in old American oak barrels, the wine slowly concentrates and gains immense textural richness.. Tasting Notes.
